One of my favorite holiday traditions is spending Christmas Eve at my Aunt Kathy’s house. My cousins and their spouses travel across the state and country for an evening filled with profanely named card games, impassioned political conversation, and, of course, an amazing meal.
Aunt Kathy’s Christmas dinner isn’t strictly traditional. There are no Christmas hams, pumpkin pies, or glasses full of heavy eggnog. Instead, my aunt’s table is always filled with a spread of vegetarian meatballs, casseroles, and a variety of roasted vegetables for an incredible vegetarian and vegan Christmas dinner.
Taking a break from our busy lives to enjoy each other’s company, and share a meal with loved ones makes the holidays a magical time — especially now that I live on the opposite side of the country.
